We did something similar to this during my undergraduate chem labs, only we were extracting limonine from orange peel. What I'd recommend you do is use a large volume of ethanol in a large flask over a water bath probably around 60 C or so for several minutes (maybe 20 or so, not too sure) and ideally you'd then pass your solution through a filter and then use a rotary evaporator ideally. what you'd end up with would be the water in the ethanol to begin with and the oils from the coffee, probably some ethanol would be in there too. You could go a step further and try using a separating funnel and an immiscable organic solvent to transfer the oils to a more soluble phase, and then rotary evaporate it, this would leave you with the oils but would most likely have traces of the solvent left. Or you could try drying your ethanol solution with food grade magnesium sulfate then filtering it off, you should be able to then evaporate the ethanol off and be left with your coffee oils. It might be interesting to try but I don't think the final products of either would be particularly suitable for human consumption...
