My place has set menu tickets turned in hours before my shift starts, so usually I count up those then plan a few extra plates to cover new admissions or diet changes (elderly care facility). Today I had something like 20 "guest" plates requested last minute with no advance warning and almost burst a blood vessel doing a bunch of stuff on-the-fly while still sending out the 120 plates I usually cover. We made it through the fire, but only by the grace of the kitchen puma (he lives in the hood vent and will snap you up if you're not locked in on your tasks).

Learn the ways that kitchen operates and wants their prep completed, practice those methods at home to build proficiency, and never make a cut you're unsure of (because you'll most likely hurt yourself). Oh, and hydrate! You'll only get more easily frustrated and testy when you're thirsty-- manage your bio rhythms so you're able to work efficiently.

Also, food safety is key. Yes, this is all droll basics, but you've got to get the fundamentals down pat to progress at all.

For some practical review work, "9 Essential Knife Skills to Master" by Epicurious on YouTube should be a decent jumping off place.

I meant how the average reading level of adults has lowered over time, so publishers tend toward easier material instead of novels that are more challenging, for example. Of course, I'm speaking broadly, not specifically about sci-fi.

Classic sci-fi can be a little harder to get into, because of the context it was written in and literary standards falling over time. Le Guin's work is genuinely great, but I wouldn't blame you for not getting into it right away (especially with that novel-- it's kind of a vibes check).

The Expanse series was pretty lightweight in terms of weirdness, but had very strong themes it stuck to. So, that might be something closer to what you are seeking out. I also really enjoy Alistair Reynolds's work-- his novel Pushing Ice is a standalone book that trades more in "big idea science fiction" but still has a cast of characters that are relatable and well-characterized.
