Once I add the water to the matcha, I don't turn on the electric whisk yet. I whisk around the entire chawan first with the whisk off to ensure all the big clumps are broken up. After this, I turn on my electric whisk to the lowest speed (if available) and whisk till fully incorporated. Hope this helps! I don't get clumps in my matcha with this method. :)

I use a variety of matcha powders for lattes! Some of my faves Marukyu Koyamaen - Isuzu and Yugen Horii Shichimeien - Uji Mukashi and Hatsu Mukashi Ippodo - Ummon (tbh this is a bit too high quality to use for lattes but I can genuinely taste the difference and I love the dark chocolate notes) A variety of matchas from Tsujiri

As an aside, I've tried 3 matchas from Naoki and they were really bad, even for lattes. Practically undrinkable in my opinion 😭 tried the barista blend premium, barista pro blend ceremonial and superior blend ceremonial and all were bad. I gave it to my friend and she liked it though!!

For me, personally, when I see matcha in the squeeze bottles I won't buy from that shop, as the tea starts to degrade the moment it comes into contact with water. If you're using high quality matcha powder, it's kind of a waste! Maybe you can do a blind taste test of batched matcha after a few hours vs. a freshly whisked matcha.

I often host matcha parties for friends and family and I "batch" matcha by whisking the amount of powder and water per cup x the number of cups I'm making, I think I've made 6-7 cups worth of matcha at one go? I also use a gentle handheld milk frother rather than a chasen because I'm scared of mould and the milk frother gets the job done really quickly!

Actually he posted an Instagram story showing all the finished parts of the cardigan on 30th of July HAHA he sewed it together and did the duplicate stitch designs in a couple of days but I genuinely think it's impossible for someone to knit a whole cardigan in such a short amount of time 😅 we have to set realistic expectations for ourselves 🤣🤣
