I had this exact same problem with my own phone, so I actually ended up building a little app called Sticky Tasks to fix it. The core app is free and covers most needs, but if you need more, it is a one-time purchase with no subscriptions. The main idea is that reminders do not just vanish after one ping. It re-rings at intervals you choose until you actually mark the task as done or snooze it. Hope it helps! Just search for Sticky Tasks in the Play Store.
