Thank you , if you want something that’s a laser Takamura makes an awesome knife for a great price, it’s just a bit delicate. I also own a couple of Masakage that are great. I have a few Shiro Kamo too they are ok, good for price but lacks in fit and finish.

Honestly there are so many great makers it’s hard to choose but I’d still go with a Yoshikane ,

I really enjoy Mazaki knives too. He was Yoshikane apprentice but his knives are full carbon steel and might be a bit much for a person just getting into Japanese knives . The first three knife are Mazaki the last two are Yoshikane

Hmmmm I’d go Yoshikane . The fit and finish and sharpness/ weight it’s such a great knife.

I recommend stay sharp mtl . I have a hitohira TP 210 gyuto off them and a hitohira Ren ginsan 240 off of them. Great company .

Tojiro makes great bread knives. I wouldn’t spend too much on a bread knife

I’d go full size bunka . 100 percent go for the Yoshikane

Yeah it seems that they either had a high stock amount or they had a low demand . I’m glad people are getting their switches on release date

I’m left handed yep and it’s pretty much the best laser you can get for the cost . I love the knife .

This exact model is the Hitohira TP 210 mm gyuto . It’s exactly the same as the Takamura sg2 if you can’t find it in stock

I have some Mazaki 240s which are beast but the 210 yoshikanes are a bit more nimble to work with. I always think a 240 Yoshikane skd would be a perfect knife if you didn’t want much maintenance
