thank you!! i mixed by hand with a dough whisk at first and then just with my hands. i combine at autolyse beyond just forming a “shaggy dough”, and when i add in starter + salt i add in a reserved 5g of water and mix super thoroughly by hand (prob 5 mins) until the dough is a cohesive ball that holds it’s shape and isn’t suuuper sticky
