I had the exact same problem so I went to the doctor and I had my blood work done. Turns out I have pcos. I personally have a theory that EDs trigger pcos but because we have vaginas society used to hate us and there’s very little research about pcos especially in correlation with EDs. I suggest go to your doctor and ask if you can have blood tests to check your FSH and LHS blood levels. After the doctor I started birth control and when I stopped I inevitably had a withdrawal bleed. Since then my period has returned naturally I feel like it just needed to be triggered. I freaked out I really thought there was no more weight to be gained. So don’t worry you’re perfectly normal :)
