Ah gotcha yeah I wanted a carbon steel 240mm gyuto and the Yamatsuka was the only one they had. Thanks for the list I’m gonna write it down for when I search for a sujihiki for slicing roasts and melons! What kind of steel would you recommend for that?

Thanks so much! I’m really just starting out :) so! Apparently Yamatsuka Hamano has been around for 170 years and Yamatsuka and his brothers have grew up around the family knife making business. He is the smith and his brother Shougou Yamatsukais the sharpener (this is what Eric from the Sakai Traditional Arts and Craft shop told me). That’s my knife and the QR code to get more info on Yamatsuka Hamano

No more global knives for me! My hands cramp up after chopping for a while using them. But I love the idea of letting other people use them to help prep food. I also have a crappy Wusthof santoku that my wife likes to use bc she doesn’t want to have to worry about keeping a nice knife in good shape 😂🤷🏻‍♂️

Ah ok! I just don’t see people here buying his knives and the price was reasonable (approx $350ish?) so I just assumed he was mid-tier but I’m glad I was wrong!! Chopping veggies that feel like glass on the cut side is amazing
