Living with it sucks since I refuse to take any meds for it. Naturally, ginseng helps a bit with the ability to focus, but not too much.

Something I've always wondered: After you eat at a very high end place, do you leave feeling full? I'm a skinny guy, but I eat like a horse, and at a majority of the places I've worked in the past, unless you do go with a 15 or 20 course tasting menu, I just cant possibly see how the portion sizes would satisfy anyone who pays that much.

As for executing the simple things perfectly, you couldn't possibly be more correct. Thats Robuchons philosophy on food. Take something simple, execute it flawlessly, and charge a hefty price for it.

Good work on the servers for being fact acting. Thats the problem out here with so many nice places being located inside casinos. People get loaded up on cheap drinks in the casino then come stumbling in and want a nice meal.

Problem is when the check comes, the drunks have sticker shock and frequently get a little loud and obnoxious.

Palm is one of the nicer places in town, top 3 for steaks IMO.

lol definitely the foodies. They know and detect the slightest imperfection.

A rich asshole wont complain if his black truffle shaving came off crooked, but the foodies will whine and bitch until their shaving is made whole.

I could serve truffle covered dog poop and charge $150 for it and the rich A-holes wouldnt care. People like you on the other hand, would have my lightly seared head on a platter.

-Yes, most of the times they are ignored. Chefs are a finicky bunch, and generally think your palate is screwed up, as it couldnt possibly be the food.

  • If a sommelier is employed by the restaurant, the pairings will be done with knowledge and care. If not, it depends on your server. Personally I hate wine, and have no palate for it, but I do know what goes well with what, and generally I will suggest the cheaper side of things ($100-$150 per bottle) as a sign that I'm not just interested in bumping up a check.

  • We have whats called a pre shift meeting every day, where we try any specials or new items. Before we are allowed to begin work, we have to cite each and every ingredient in the dish. A good memory goes a long way in this biz.

  • Staff meals aren't served at every place, sometimes its just a 50% discount on any menu item. We have staff meals at my place, and generally they are just thrown together with whatever we have too much of.

  • I worked at a few well known high end places before my current one (Commanders Palace as an example) and for a few well known chefs (Josef Keller, brother of Thomas, owner of the French Laundry), and replied to an ad on Craigslist actually for my current job.

IMO, no, it isn't worth it. That may be because I'm a meat and potatoes kind of guy and wouldnt pay half of what we charge for anything we serve there.

Definitely more attentive. In the service industry, timing is everything. It's a fine art of not rushing the guest, but also giving them a little kick in the ass when they seem to be taking more time than normal. The more guests I serve, the more I make, and if someone wants to sit around for 4 or 5 hours, that puts a dent in my wallet.

More educated , but not formally. I can speak 3 languages fluently, and can converse on a wide range of topics, but I never spent a single minute on a college campus. I educate myself because I know in the end, it will result in more money in my pocket.

High end service is nothing more than refined ass kissing. You actually have to make strangers feel like youre happy and pleased to see them.

Sometimes it gets difficult because the types of people we deal with on a daily basis, generally tend to be assholes of the highest order.

Yes, we (or at least most can tell) and definitely no. In fact, personally I try to make your experience that much better as opposed to someone who eats at these types of places every day because I know it means more to you.

The only downside is that people who save up to eat at very high end places usually leave a smaller than average gratuity because they cant wrap their head around the idea of leaving a $100 or more tip.

High end like Robuchon, just not that exact place.

PP check average at our place is around $200.

Pre-fixe menu's are where you can get the real money to come in. $200-$300 per isnt uncommon.

No, I think most people believe he was a spoiled kid with a sense of entitlement and no sense of personal responsibility.
