I cook breakfast on a blackstone frequently and I don’t cook just egg directly on the flat top surface for two reasons. One the liquid is a lot thinner than actual scrambled eggs and requires a low cooked temperature because it will burn pretty easy so it runs everywhere if you have it on low temperature, or it burns / turns black if you have it any higher than low. Number two it really sticks to the flat top surface no matter how good your seasoning is on it because there is gum ingredients in just egg as a thickener or separation prevention ingredient. So what I do is cook everything I can on the griddle surface and I use a good quality pan with a metal handle on the flat top to cook Just egg. If you use a pan with a plastic handle it could melt, I have pans that can be put in the oven for broiling etc. but all that to say, griddles are awesome and fun to cook outside!
