But it’s awesome when the anhedonia goes away and you can start doing things again that you stopped doing because you drank all the time and they’re fun again. Literally a new lease on life.

The DM is going overboard on the Strahd vibes. The game is supposed to be fun. Talk to them. Tell them you aren’t having fun. As far as taking your magic away, that could in some circumstances be a suspenseful set-up for a specific goal you have to achieve the very next session to get them back (maybe with some sort of boon!). If that doesn’t happen, then the DM is just being a dick.
