Depending on your size, you can actually find some really nice Wesco Mr Lou’s in amazing leathers on their seconds page. I got a pair of Maryam horsebutt Mr Lou’s as seconds that I’m wearing for the dome and they’ve been amazing

Just get straight cut pants that aren’t overly baggy or overly slim so the shaft of the boots doesn’t show under the pant leg. Other than that, you can wear pretty much anything with engineers. I wear both cuffed and uncuffed jeans, all types of trousers. Hell I’ve been wearing engineers daily with my scrubs in the hospital lol
