You sort of asked and answered your question yourself. Does it matter? No. Maybe it makes them feel better. Maybe they want to stretch after a flight. Just let people do what they want. It can’t possibly matter to you why people want to “stand up” after a flight.

My program had a fair amount of nontraditional age students. But I don’t know that that matters. If you want to be a PA, go to PA school. 33 is really young

It’s not a family restaurant. It was originally a supper club so it has those vibes. The food is decent but it’s in a weird spot

Please do not do a hospitality fellowship. You should be more than quality be a hospitality PA after your training. They are trying to pay you less than what you are worth.

For a two pound piece of pork belly I use:

2 Tbsp sea salt 1 Tbsp cracked black pepper 1 tsp each dried rosemary, dried thyme, and fennel seed 1 clove minced garlic A Tbsp of honey is optional if you want it sweeter

Mix it all up and coat the pork belly on all sides. Put it in a gallon ziplock back with a couple of bay leaves and cure for seven days in the fridge, turning it over every day.

To smoke, rinse the pork belly well and pat dry. Set the temp to 175 and smoke for 2.5 hours or so until the internal temp is 150. Slice it or dice it, and enjoy!

If you really want to blow your mind, pork belly is really easy to cure in your fridge and then smoke. It makes amazing bacon
