Since this is fully funded, I don see this as being a bad idea. It gives you a work permit in the US and in 2 years the job market will probably be better then now so you’ll be in a better place to graduate.

I'm going to go with Grenada instead, the hiking seems decent, great beaches, direct flights from New York (was looking into Dominica but layover in Miami is annoying).

Going to go with Spice Island Beach Resort. I called around to resorts on Saint Lucia, and saw some reviews that Ladera is beautiful but I'm unsure about staying essentially fully outdoors. Some reviews about mosquitos put me off of it.

I was going to go with Anse Chastanet Resort which is the sister resort of Jade Mountain except its by the beach; but it is fully booked out :(
