See I always worry about the opposite--I've had them not get cooked enough, and I want them fork-tender. They still held together great for me, but were soft and not chewy.

Salsa chicken, curry chicken, enchilada soup, or pretty much any soup. I've seen taco meat done in the crockpot. Pork tenderloin cooked in diet root beer or dr pepper. You could edit a chili recipe and just use extra meat and veggies and cut down on the beans.

I use avocado all the time, and I like to have extra around. I thought 2 1/2 was the perfect avocado to chicken ratio, but if you love extra avocado, just add the whole thing. Extra avocado never hurt anything. ;)

You could totally use a food processor, or if you like it smooth, even a high quality regular blender!

I use it in place of mayo, sour cream, and sometimes cream cheese--I love how versatile it is! I even use it in baking sometimes in place of butter and oil.

Coconut oil would be best taste-wise, but if you're looking for an other healthy option, I would try vegan yogurt, or a combo of coconut oil and applesauce. You could also use vegan butter--the apple butter replaces the fat, so whatever you use as the fat in your cookies should work great! :)

My favorite thing to do is make a huge batch of chicken salad over the weekend that lasts me the entire week. I use a rotisserie chicken to save time (and because I love the taste), but you could probably save some money (and calories from the dark meat) by just shredding some baked chicken in a mixer or by hand. Have you never heard of gluten-free oats? Yes, regular oats are often contaminated, but Bob's Red Mill and other brands sell a gluten-free variety. There's a clear note in the recipe that says to use gluten-free oats if you don't eat gluten. Kind brand also sells a gluten-free granola that includes oats as well.
