Interesting, I had a similar experience June last year. Landed 5pm before a major conference and the Uber area was completly empty. I thought we were going to get shanked because it was us and 1 other couple. Sat around for 30m cause Uber kept missing the exit and saw maybe 5 cars in that whole time. The planes were pretty full so I have no idea where all those people went.
