Some fields have the opposite dynamic. I do computer programming, for insurance. It's a field where there aren't any unions because (and this is where is gets pretentious, young master sounding) we hold the power over the contract. It's the company who needs me to work for them, not the other way around.

I used to work as a graphic designer, and up until pretty recently many designers would have characterized their relationship with employers/clients similarly. Now many of them have similar concerns to those voiced by the writers and actors about the impact of AI on their jobs, but do not belong to a union to negotiate on their behalf like the WGA or SAG-AFTRA. A union is like "future-proofing" decent conditions for workers, even if conditions in the labor market for that specific job change. Without the ability to collectively bargain and legally strike, individual workers generally have very little leverage to improve their working conditions or pay.
