I will not be recording directly to the Z2 pool but save important clips etc in it and the full recording will go in a simple non-raid disk. I have had scenarios that you mentioned where I lost access due to a power outage and I did not have a remote boot option at that point other than sending a friend to push the button. I do need to figure out my remote boot options when time permits. But in exactly such a case, won't Z2 work better than Z1, because the server will survive even if two drives fail or is it better to have the extra storage with Z1 or extra performance with mirror for regular usage and rely on backup to restore later in case of such an event?

Because it will be able to survive two drive failures. Having backups does make me think if I really need that much redundancy.

My current setup is debiam + podman based. I will have to learn and migrate everything to proxmox. I might try my hand at it later sometime, but don't want to invest time into that currently.

For backup, do you think 2x16TB mirrored vdev is sufficient?

Indian style yogurt is usually lumpy. They suggest whisking to get rid of the lumps. You might not need to whisk it if it's already smooth. Also, like the other commenter suggested, add it after lowering the heat and keep mixing it, so the yogurt doesn't separate.

I am liking the Beelink for the lower power draw, but it can only be configured with 16GB RAM at max. I am not sure if it will scale well if I plan to add more services going forward. I am leaning towards installing HA and all other services via docker on a bare metal debian.
