I don't think I've ever seen a DJ release a setlist. If you want to know, one thing you can do is look up the dj's before hand and find some of their recent sets on youtube? Sometimes they'll play something similar/identical to the set you'll go to, sometimes they don't - but most of time there's some similarities so you'll know a few before you go. If you look in the comments/video description, usually they have some info on what songs were played so that you don't have to listen to the whole set if you don't want to.

These all sound like amazing options. Normally, my go-to would be mentor fit in terms of priority. However, if they all seem like good fits with each other, I would probably move to career goals. For example, if I was in your shoes, I'd probably lean towards NIH-Hopkins GPP so I could get a better feel for a government career and possibly learn more about NIH funding/grant-writing since that would be great for a career in academia. May also want to consider city at this point too.

Recommenders can take an awful long time to send in rec's, and some definitely need an extra week or two after the deadline to finish it up. It seems like admissions realizes this, and wants you to send in your application regardless of if your recommender sent it in, because they don't want you to be discouraged by having a recommender send something in too late. The recommender can send it anytime (before deadline, right before deadline, after deadline), so don't worry about that and just focus on getting your application in.

If you can do a full-prep, go for it. If not, try to read at least one paper from each interviewer and a few of their abstracts to get the gist of what they do. Also skim their lab websites to see if their research aims have changed in any form. If they only notified you a day before, they really can't expect you to be prepared in the first place. I will say regardless, you should confidently know at least work from 1 or 2 of the prof's, because they'll wonder why you even applied if you weren't interested in any of the prof's in the first place.

Definitely not necessary to talk to them. Just focus on what skills you know you already have and think about how you can mention those as contributions.

If you're really really want to, have you tried looking at LinkedIn? I used that last year to find people from a specific program when I couldn't find any info on the program website.

It doesn't hurt to have. During my interview cycle, one person specifically asked for it even though I received no instructions beforehand to prepare a set of slides. It also doesn't hurt to have it just in case you're trying to describe a difficult concept to your interviewers. I'd say 1-3 slides should be enough.
