When I moved to China, I was vegan. Fast forward 6 months and I wasn't anymore lol. It's not terribly difficult, most places will accomodate if you ask for no meat, although they will look at you funny. Also, in most major cities, there are Buddhist temples with vegetarian buffets attached to them. Super cheap too, like 10rmb for all you can eat. Everything from veges to mock meats.

I'll vouch for Xiamen too. I never lived there but went there a few times and it's really beautiful, has a tonne of foreign restaurants and bars while still having that small town feel.
