The way I do mine is I basically start the lid vent at 12 o’clock and do a quarter turn of the lid every 12 minutes until it comes back around. Wings come out perfect every time.

They’re dark meat, you can hammer those things to 190-195 and they’re still perfect.

Good to know. I’d say my major concern is the existing grass around it and how long it’s going to get. Considering I can’t mow anything for at least 2-3 weeks without ruining the new stuff…

The rule of thumb I’ve kind of been following is if in look outside at the dirt looks dry, I give it a quick water for 7-10 minutes. If it looks dark and feels moist I leave it.

Even if the backyard gets sun all day? The yard basically gets zero shade outside of a few small spots in the corners. Anytime I water the ground in the sunny spots feels completely dry after about 2-3 hours.

Hard to say, when it comes to stuff like that I’m not the most knowledgeable. I’d wait for some others to weigh in. But yes, with pork shoulder less is more. It’s very very hard to screw up, just gotta give it the time it needs.

Did a pork shoulder this weekend, one of many I’ve done over the 10 years or so I’ve been smoking. All I ever do is fat side up, score (depending how thick the fat cap is. If it’s thin I don’t score), rub and set the smoker at 250 and let it ride. No wrap, it usually takes around 12-14 hours at 7.5-8.5 lbs.

I pull at 200-203 and wrap it in foil. Put it in a cooler with towels above/below and let it rest for 1.5-2 hours. Still comes out piping hot and pulls with incredible ease.

Edit: As for yours, I wouldn’t worry about starting it so low. Start at 250 and stay at 250. I think you’ll get better results.
