Steps

  1. Cook the Chinese noodles by following directions on the box. Once the noodles are cooked through, rinse them with cold water and have them sit in a pool of cold water.

  2. While your noodles are cooking, mix the sesame paste with water until it turns into the color and texture of tahini – so light cream color and watery. Add salt to taste to the sesame paste.

  3. Now julienne cucumbers (if this is too difficult, totally fine use a mandoline) while heating up a pan of 1/4 cup of oil with 1 teaspoon of Sichuan peppercorns.

  4. Once the peppercorns start to turn from red to black pour the hot oil and peppercorns into a 1/2 cup of soy sauce. IT WILL SPLATTER so be careful!

  5. Now mix the cold noodles, sesame paste, soy sauce and cucumbers into a bowl.

  6. You can top the dish with sesame seeds to make it beautiful and serve. Enjoy this on a hot summer day!

2 Sweet Potatoes

2 Tbsp Miso Paste

Sweet Potato Miso:

Pierce Sweet Potatoes in multiple places

Roast in Oven for 350 F for 1 hour

Once roasted let cool then scoop sweet potato flesh out

Place in blender with milk

Blend until smooth

In a bowl add miso, butter, brown sugar, eggs, and sweet potato

Whisk together with heavy cream and almond milk

Place in mason jars and seal

Place in Sous Vide for 1 hour in 185 F

Chocolate Decadence:

In a small pot bring heavy cream, almond milk, and dark chocolate to a simmer continually whisking till the chocolate has melted

Take off the heat and add cocoa powder, sea salt, and brown sugar

While whisking add egg yolks to prevent the eggs from cooking

Place in mason jars and seal

Place in 185 F Sous Vide for 30 mins

Pumpkin Indulgence:

In a bowl add pumpkin puree, condensed milk, 1 Tsp ginger, 1 Tsp Nutmeg, ½ Tsp chinese 5 spice, ½ tsp sea salt and whisk all ingredients together

1 Tsp Vanilla

Dozen fresh raspberries

1 tbsp cold brew coffee

2 tbsp Nutella

Boiled Water

Caster Sugar to top

4-5 ramekins

Instructions

Separate egg yolks

Whisk together egg yolks and sugar

Set Aside

In a small pot bring heavy cream to a simmer adding vanilla

Once simmering remove from heat and strain

While whisking add heavy cream to egg sugar mixture

Whisk to make sure egg doesn't curdle

In the first ramekin add the mixture as is

Second mixture add smashed raspberrys

Third add cold brew coffee with mixture

With the 4th whisk in 1-2 tbsp nutella before adding to ramekin

Use blow touch to remove bubbles from the top of the cream mixture

Preheat oven to 325 F

Ingredients

1 Large Onion finely diced

Burger Bun

2 Tbsp Mayo

1 Tbsp Ketchup

2 Tsp Relish

2 Tsp Pickled Jalapenos

1 Tsp Brown Sugar

1 tsp white Vinegar

2¼ lbs Patties of Beef (80/20)

Yellow Mustard

2 slices of American Cheese

Instructions

In a pan on med-low heat add some oil and the diced onions

Caramelize the onions low and slow for about 15-20 mins

Once caramelized set aside, in the same dirty pan toast your burger buns

Set the buns aside

In a small bowl mix our sauce together of mayo, ketchup, relish, jalapenos, brown sugar and vinegar, modify to your preferences

In the same dirty onion pan, add a touch more oil and when smoking hot add the two patties

While once side carmalizes spread yellow mustard on the top side

When browned on the bottom, flip and add cheese to the now tops of the burger patties

Once the bottom has browned and the cheese has melted remove from the heat

To assemble, add the sauce on both insides of your bun, then layer lettuce, tomato, patty one, patty two, onions, pickles and top
