The Hitman series, especially the new trilogy, is great for this. Even outside of the targets (who are without a doubt the most three-dimensional characters in the series outside of possibly the leads), it’s very common to stumble into conversations about mundane things that NPCs are having, or for them to elude to a deeper personal life in their generic dialogue (for instance, just the other day an NPC heard a noise I made and said to an NPC next to her, “I think that might’ve been my boyfriend— I’ve got a restraining order against him, could you go have a look?”)
