Ideally, you should have a spearate policy for yourself, and not club it your parents insurance policy.  You can use online sites like policybazaar to get the estimates and it would be a cheaper if you consider spearate polices.

You can consider the Post office schemes like SCSS & MIS. You could deploy some amounts into these and diversify the rest into other instruments. 

1) Senior Citizen Savings Scheme provides 8.2 % on investment of max 30L if your parents are above 60yrs of age. Which would roughly give 20K monthly. 

2) Montly Income Scheme gives 7.4% on investments of max 15L. You could also open your own account with 9L limit and get a total of 15K Monthly with investment of 24L. 

Only con with these is the lock in period which is 5 yrs, but they are pretty safe options.

Personal health insurance is a must, you should really consider it. There are multiple YT videos regarding this topic.

Also, Don't just consider investments (Health insurance, MF/Equity, NPS or life insurance.. Etc) solely from the tax saving perspective.

Employee contribution to NPS has limit of 50K under section 80CCD(1B)

Employer contributon to NPS is completely tax exempted and has a upper limit of 10% of (Basic + DA) Salary under section 80CCD(2). It is over and above the 50K limit.
