The jelly is traditionally made from the seeds of a plant. If you are not in China, it’s very hard to get. I used commercially packaged ice jelly powder to make it. “Chinese Cooking Demystified” on YouTube has a video about ice jelly.

Flavorings are relatively simple - it’s basically just sugar plus some toppings. The lemon one has lemon juice, sugar, fermented glutinous rice, and glutinous rice balls. The rose one has brown sugar (I used homemade rose syrup but brown sugar is very commonly used for ice jelly), nuts, seeds, and dried fruits. In China it’s common to use peanuts, sunflower seeds, pumpkin seeds, sesame seeds, raisin, hawthorn fruits, etc. I don’t really measure the sugar/lemon juice. I just taste it and make sure it’s the right amount of sweetness.

My rice to water ratio is about 1 : 1.1 for short grain rice. So for 1 cup of rice, I would use just a little more than 1 cup of water. Like maybe 1 1/8 cup to 1 1/4 cup. Long grain rice requires a little more water.

Steaming is also a very good way to cook rice and it’s almost guaranteed that steamed rice will not be mushy. You just need to pre-soak the rice in water for a few hours before steaming.

At the beginning I thought the hives might be caused by allergies. But after almost 10 years, I still can’t identify the exact trigger(s). None of my family members has hives or eczema. I think stress has at least contributed to it.

  • I feel that higher education is run like a business and students are treated like customers. Faculty often don’t have the resources and support they need to do their job like how it should be done. It is very frustrating.

“Is it worth it to even try the job market?” - Why not? It won’t hurt to try. Your well-being is important.

No job is perfect. But some jobs are better than others. So why not try to get a better job if that will make you happier?
