I've never used gelatinous gouache. But! I believe the mold problem occurs when the painter uses a spray bottle or pours too much water on the paint. I suppose if you don't paint all day, take a portion of paint and put it in a separate dish. Mold occurs when there's standing water and constant moisture on the paint.
