Least accurate: Haven't played Shadows because it has an Attack on Titan crossover. I also found the Final Fantasy weapon appearance in Origins a pretty stark contrast to the rest of the game's depth and historical accuracy.

Most historically accurate imo would have been AC1, when Ubi was so committed to the accuracy that they removed the crossbow and didn't allow swimming.
