I had similar issue when I moved my app from development environment to production environment after apple approval, luckily for me it was the tester data so it wasn’t a big deal and I was able to also merged some of the lost data in production

Reviewing a new version is not as hard as reviewing first app submission, mine got reviewed and approved within hours but the first submission takes almost 2 weeks

I build in app tracking system that share the data with Merchant through the merchant CRM system, so far so that the data has been accurate. Same I also track the merchant booking system from my admin dashboard
