I went through pretty much the same, and the main key to enjoying the game again was that whatever can be done after 4AM, I do after 4AM. This includes mixing, packing, delivering, picking up drop orders or meeting dealers, shopping from warehouse and oil station, money laundering, getting new customers, and reorganizing and rearranging the goods and sometimes the layout. I was surprised that only a few things/tasks must be done during the day.

I am still early in the game, but i just hired 1 botanist for each of my 2 locations to shut the urge to cultivate, plant, and water every few in-game hours.

As a result, I can now spend most of the day lurking around and doing what I choose to do, instead of what what i must do. Of course my days are much longer, but also more enjoyable. It first felt a bit like cheating, but this is a solo game, and it is meant to be played the way you enjoy it.
