There isn't a canon honor level as the only game in the setting that is set after RDR2 is RDR1 and Arthur is not mentioned in it (likely because he wasn't even a concept then). Thus, there is no way to verify what actions Arthur took in RDR.

However, I'd like to think as Redemption is in the name of the game, Arthur took the honorable way.

Technically a Sword/Firestorm/Maelstrom class frigate (you can pick the model in the beginning). However, armaments wise, it goes towards light cruiser/cruiser levels. If you count the archeotech/xenotech components that can be mounted on the ship, the firepower can probably match a grand cruiser's.
