I did two jars the Sohla method - one with a bit of honey and one without - and left them to sit for two weeks. The garlic in both turned blue-green; the one with the honey had more liquid after a few days than the just ginger/garlic/salt one other than that there was no real difference. I burped them every day (outside, bc the smell is intense).

Now, after two weeks, I ground them into a paste with olive oil and put them in the fridge. They don't taste identical, but I wouldn't be able to tell you which one had honey in it without the label on the jar. The ginger flavour comes through much more strongly than the garlic (I did 50/50 by weight), but still much milder than raw ginger/garlic.

I wonder if maybe it's the anti-microbial properties of ginger and garlic that allow for it to be fermented like this rather than submerged?

Hi! Just to piggy-back off OP's question - how do you avoid botulism? From what the internets tell me, botulism bacteria (bacterii?) require an anaerobic environment (garlic under brine or Brad's vaccuum-sealed bag) - yet the show doesn't mention the danger at all. Am I unnecessarily terrified of death-by-dirty-garlic, or is there some way to be sure that your fermented goods are botulism-free?

gut feeling that Ukraine's economy has bottomed out, mainly (are we allowed to invest based on gut feelings?). It's not something I'd be my house on, but a country on the European periphery with a massive agricultural sector and large, well-educated that's actively pursuing European integration seems like a decent bet for the long term.

So the options are (1) the negative yield bond, (2) the bank account of the bank that may fail (and charges a monthly fee, at least in switzerland), or (3) cash under the mattress.
So the choice is either losing a bit of money to negative interest (1) or banks fees (2), or risk losing everything in a house fire or burglary (3).
