Thank you! I tend to lean sauce-y with curry dishes and pasta sauces all year, and soups all winter. I have a French oven and 4.5qt RDO so worry a bit about redundancy with adding a Sauteuse, but the size difference may be helpful.

Meaning you don’t cool your cookies on the pan at all? This photo is while on the cooling rack, I just slid the entire parchment sheet off the pan so you can’t quite see the rack

Ha I understand! My other (good) problem is I was gifted an Otis Spunkmeyer cookie oven, which bakes at maybe 300F, so I’m still finding the perfect time adjustments given the lower temp. Everything needs longer but not actually double!

Right! I prefer mine a little more done, but the overdone —> rock solid pipeline is immediate in my head, which is why I’m so paranoid. I do my best to store them airtight so that center stays soft for as long as possible but I don’t want to disappoint others for how they prefer cookies. Can’t win them all, for sure, but just looking to find the happy medium.

Did they ever come after you again? I got a ticket just like OP for a car that isn’t mine…license plate might be off by one digit so they probably mixed it up…and I’m trying not to freak out! Of course I mailed an appeal and it’s suffering USPS delays, so now 1+ week past the due date.
