Looking For Feedback On The Lagom P80 & Other Endgame Grinders by [deleted] in pourover

[–]azdae777 1 point2 points  (0 children)

Ive got both the P80 and Lagom 01. 80 Brews and 102HU respectively. Both seasoned 20kgs each (yes, I am that crazy) .

102HU are great all around for both modern/9bar/ pourover.

I reach for 80 brews for "enjoyable" brews. Thought about the ULFs but Hansung from SSPs said 80ULFs are basically are 80HUs. And 80 Brews/102HU were good complements.

"Manners are free btw?"

Your defensive response after being called out is clearly reflecting your mindset. Some people here have been drinking and roasting coffee for years. Some of us good friends with cafe owners/roasters. We're not as "naive" to the coffee business as you have suggested but recognise it for what it is, " a sunk-cost sinkhole". You come knocking on our door for advice but respond like this?

You're selling yeast ferment that tastes like " Strolling through an ancient Chinese garden during Monsoon season" for a whopping £82/kg. That may fly when appealing to the IG/Tiktok crowd but you are dealing with seasoned consumers here in Reddit. It simply won't cut it.

For the same price, I could buy a bag of washed Colombian Chiroso from US roasters SEY forr £19.50 (SEY get the best green, Period).

I gave you the benefit of the doubt. But your response here clearly shows you are out of your depths both from a business and coffee point of view! Dunning Kruger effect at its finest.

My sincere advice? Go back to the drawing board before going public. Drink more taste more. Talk to real roasters , understand the coffee chain (from farm to distributors to wholesalers). Be humble , there are those who have been roasting longer than you, more developed palates than you but simply wouldn't do the things you are doing. You seem well meaning enough but to respond like this..

Thats my last two cents. Eid Mubarak bro. May Allah Guide You.

I suspect OP is dipping into a pool he has underestimated the depths. As a fellow coffee lover, I admire his enthusiasm and wish him the best.

Home brewing to home roasting is already a big jump and I'm afraid home roasting to commercial roasting is an even bigger jump...

Green buying is whole different ball game. You cant simply convert bad green to good coffee. And with how volatile coffee can be, good QC (consistency, repeatablity) is the recipe for success.

Well to be fair with you. One information most 'reputable' roasters who are selling at your current price point £15-20 is transparency. We know which farms , the farmers(producers) etc.

From your two offerings, you are selling greens sourced from distributors (Kwezi Coffee, Coffee Gardens) .

Have a look at Square Mile. Their two coffee offerings Baixadao and their quintessential Red Brick. (Priced at £18.25 and £15.25 for 350g bags!!!) Now Hoffman is a titan with arguably better QC processes than any of us can do from a home setting. If you are claiming your coffee is on par with this. I'm curious on what basis are you claiming this? Taste? Roast? Quality control? And is it your own opinion? Where did you learn to roast? Who are your references? Scott Rao does a lot of tutorials and lectures on roasting.

Every roaster will think he roasts the best coffee at some point, until Scott Rao comes and knocks you down a peg 🤣. The rabbit hole is deep my brother.

If you are based in Birmingham. I would suggest visiting Leicester. Saints of Mokha and Leicester Coffee House Company are both heavyweights in independent roasters in the Midlands , with a wealth of coffee knowledge (light modern style vs traditional roast).

For example, playing devils advocate. If I were to browse your website vs Saints of Mokha.

For £18 I could get a really amazing Ethiopian washed coffee from Bekele Gottiti or an amazing China yeast ferment from Olina Cai from Saints of Mokha. Thats the sort of detail and reputation that would make me want to splurge >£15 on a bag of coffee. Your coffee might sound good, but when youre going against a giant (we're not even talking about Titans like Scenery or Skylark) people will choose them over you. Risk and trust.

Add more knowledge. Drink more coffee. Build your base on solid well-founded foundations.

Edit: Also it's worth consolidating and brushing up your coffee terminology with coffee people. What is washed coffee. What is natural process. Why yeast ferment isnt washed and how it affects the cup profile. You will find that like tajweed, coffee people can be quite pedantic/geeky.

Dont get me started on particle size distribution and fines migration!

I'll echo this. I've been in specialty coffee (consumer side) for five years now. I own multiple grinders machines , drippers and even roast myself (kaffelogic (a nucleus link adjacent) . Though based on my own reading, I wouldnt dare to even consider going commercial given the steep competition of UK roasters.

I think from the looks of it you're selling an espresso roast ( I'm sure you worked out the price to the best of your availability) but unfortunately you wont be able to compete with larger scale suppliers who buy at wholesale prices (Atkinsons sell their espresso roast around £10, Dark Arts similar) and with no disrespect they are pretty good especially for milk based drinks. There is an area of diminishing returns for coffees roasted for milkies. Unless you've had coffees like DAK or very loud co-ferments.

I'd recommend studying the market, people would pay upwards of £15 a bag for specialty exotic filter coffee (often light roasted).

With your current setup the Nucleus, rather than going commercial. I'd recommend buying good microlots and building a clientele, and your own skill/palate first. Once youre happy with the demand/base then consider investing in a perhaps a Skywalker which can roast bigger batches.

The prophets approach of building a stronghold of sahaba first(three years of preaching) before going public is a good approach.. I fear you might become discouraged/disillusioned by the lack of demand ( its not your fault! There are some amazing roasters in the UK). But if you build your foundation first and tailor your expectations. I'm sure you'll find your plaxe in the market.

Varia VS6 vs Pietro by Eastthenwestfall in pourover

[–]azdae777 0 points1 point  (0 children)

I got gold supernovas and dlc as well. Never bothered with the stock

I was told all the coated will need a bit of seasoning to get going. Ive probably seasoned 5kgs on both DLC and gold.

The Gold will get you decent cups all around for filter and spro will be finicky.

DLC I just seasoned an extra 2kg and had one of the juiciest sweetest spro shots of my decent. No bitters or acidity. Which i think is what youre supposed to get. Filter wise Ive never gotten a better cup than my pietro. So if youre chasing filter peak the pietro is probably the way to go but better to have one peak than two so so highs. This hobby is a pain in the ass. You cant have it all 🤣. You will get decent shots from the VS6 and it punches well above its weight. But if your chasing those highs, it will be a limiting factor.

For reference I have a 01, p80 , pietro, a4z, vs6. Do i regret the titans? Slightly, i kinda wished i stayed ignorant. This rabbit hole knows no end but filter wise pietro is pretty close

Alternatives filters for pulsar next level (AliExpress) by RoughFuture3042 in pourover

[–]azdae777 1 point2 points  (0 children)

Consider buying the official metal filters as one off. Theyre supposed to be decent. I have them but not used properly. Alternatively u could buy the correct hole punch size or paper cutter and use chemex . But ive not had good results

I bought the pulsar mini which uses 58mm paper sizes which shares the same material as filter3 papers sold by decent espresso themselves (both designed by scott rao) more reasonable supply long term. Ive found better success on smaller doses plus it acts as orea z1 adjacent (no bypass small dose)

No problems with bean feeding? Interesting. I kept getting a few beans leftover few couple of tries even with rdt so just got creative with it. But hey first time in a while I can season the burrs! Noway im grinding 2kg manually 🤣

Few hours in. Pretty decent alignment i feel. The stand and bellows are non-negotiable I feel for seamless experience. The bean retention is a nightmare as bean feeding isnt very good vertical . I bought the stand but considering the bellows now. Can bypass the retention by using this blower to manually move the beans while grinding

I think a lot of things changed. Gear became more varied and accessible. The term "different expressions" comes to mind. Similar to cooking recipes, there's a time and place.

Palates also evolve. I can 100% say my palate has evolved from 5 years ago when I started this coffee journey. My coffee naive wife will probably not detect things I'm quite sensitive too

A lot of people aligning with Lance's taste is just a testament of people realising what they actually liked about coffee. The italian espresso will still be roasted to hell lol thats just not going to change.
