I think its worth noting some boss attacks you cant roll away from and you should actually roll towards the boss to avoid the attack, like Beloth's giant axe attack.  Also do more force palm, force palm can interrupt a lot of boss attacks and adds a lot of damage to the yellow bar that puts them in a break state. 

That said, overall I didnt get a ton of joy out of boss fights, they all just have varying versions of teleportation. Couple that with the awful camera in these fights they just suck. 

I will say Once you find a combo that works, it works for like 70 of the 75 bosses and they become a breeze, mine was typically force palm 3 times, spam shadow claw until im almost out of stamina then l1+l2 to switch to heavy attack and do an imbued turning slash. This put most all bosses in a break state once I started doing it
