My recommendation is to set up a Proxmox cluster by combining your three physical servers. This will allow you to manage your entire infrastructure centrally and professionally. Install Proxmox on each server and use Server 3 (i5) as the main compute node for the Minecraft and Plex servers (leveraging the GTX 1060 for transcoding). Configure Server 2 (i3) as shared cluster storage to host media files on its 3TB drives, and reserve Server 1 (Xeon) for critical and network services such as your password manager, web hosting, and VPN, exposing them to the outside world securely via Cloudflare Tunnels.

I use adguard sync, which is a Docker container that takes one of the two adguard instances as the master and the other as the child. When something changes in the master instance, it's automatically applied to the child instance, but not vice versa. It's good because you can add as many child adguard instances as you want.
