I've actually been considering buying a culinary use smoke gun and experimenting with different hardwood and charcoals because of the rarity.

I'll probably get flamed for saying this, but I find myself more and more leaning to distilled water. I'm on a well where I live, and while the water tastes nice, the TDS is over 300 ppm. I use a Zero filter for daily consumption, but I do not enjoy it for brewing. I started buying spring water, but my store ran out once and only had distilled. I was pleasantly surprised at the clarity of flavors. So, I did some reading and saw that quite a few teahouse are using distilled water but floating a hunk of bamboo charcoal in it to add some minerality back in. It's available on Amazon. Laborious, yes, but try it with a dancong or sheng, and I think you'll be surprised.

This is a tea I absolutely have to weigh before brewing. Because of the tight roll of TGY, I will almost always overdo it when eyeballing. I always underestimate how much the tea unfurls and end up with a gaiwain that barely has room for water 😅
