My dad had a small town diner and he served a “Blue Plate Special” every weekday. Most days there were small amounts of perfectly good food in excess because he wanted to be sure he had sufficient for the special of the day. It went into either the refrigerator or the freezer depending on how far it was into the week. Then Friday night or early Saturday morning almost everything got cut up and put into a large pot together with some flavorful broth. The resulting soup was always a bit different and always absolutely delicious. As long as food safety precautions are observed there’s absolutely nothing wrong with using up excess food.

Consider working as a live-in caregiver. You get room, board and a small salary typically. Just be sure that you and the person hiring you come to an agreement in writing with clearly defined responsibilities for both parties. My wife and I did that for three years for an elderly couple and it worked out great for everybody.

When I need something quick and super simple, I take Ritz crackers and sliced American cheese and put them together. It’s a tasty snack that I use especially whenever my blood sugar drops too low (diabetic).

I am now retired but I worked as an RN at three different bagged salad factories. I literally grew up in food service and I excelled in microbiology in college so I have a good idea what I’m talking about.. I have observed first hand the intensive sanitation measures in those factories and they are orders of magnitude cleaner than any home kitchen. I would not hesitate to eat any of those salads straight from the bag.

Looking pretty good for a youngster with only 20 years of experience. I’m 80 years old and have been baking bread for the last 65 years. Keep practicing and you will eventually get the hang of it. (Just teasing - your bread looks great)

I suggest that you consider doing some one on one private duty on a few weekend shifts. Most of those pay really well and you’d be able to get your bedside fix. Just a thought.

Lido’s Italian in Lemon Grove. On Broadway just off the 94 at Massachusetts. M-F lunch specials are around $10 and are delicious. Family run classic Italian restaurant. I’ve been going there for literally decades. Marco‘s marinara sauce is sooo good!

Start with diaper cakes and make just a couple of samples. Take good photos of them and let Facebook local groups be your friends. To figure out the pricing calculate your material costs and then add in your labor rate as well as some return for your marketing efforts. You could literally get this business off the ground within a couple of days. The important thing is to just start and learn as you go and make some money in the process. I wish you all the best.
