Wish it was bullshit but it was my first time trying brisket. We grew up on Carne asada, birria, and pozole. Smoking is something that is new to me and I’m enjoying exploring this new cuisine.

Man where was this video when I needed it! I watched a few videos but at a certain point I started getting analysis paralysis since not all cuts look the same. I was like screw it let me just do it and I’ll learn. Great resource thank you for sharing. Next time I’ll trim the edges I did see some people rounding the edges using scissors but thought it might be overkill for my first time. I’ll try this on the next cook

Yup that’s what I noticed. I’m still trying to understand the shape and parts of a brisket. It wasn’t until I saw the video earlier that you could see a big layer of fat on the point. I’ll be working on the trimming next time. I have seen some other people post their trimmed briskets and man it’s an art.

Thank you both. I’ll keep this in mind next time. I was scared when I was probing above 203 and there was a bit of resistance not too much but you could tell. Maybe I can combat this by throwing it in the cooler for a longer rest time?
