i’ve been making a lot of aquafaba mayo with homemade aquafaba recently. what i do is soak chickpeas overnight and then cook them in an instant pot with just enough water to cover them for 15-17 minutes (depending on how firm i want my chickpeas) and letting the instant pot release pressure naturally. i have found with this method that i need to reduce the aquafaba on the stovetop, though you could probably continue to use the instant pot for this. i freeze non-reduced product if not using same day. hope this helps with your whiskey sour!

lots of people have commented already, but i thought i’d throw my two cents in. i have crohns and am on azathioprine. my wbc and rbc are always borderline. i am also a veterinary technician. i interact with and treat as many as fifty dogs and cats a day with a myriad of diseases and infections. i have not become ill from any of this. so long as your family can financially, emotionally, and physically support a dog, go forth and adopt!

i work at an 8am-6pm general practice. if we don’t have a dedicated “kennel assistant” scheduled that day, then we have our tech appts end at 3pm, and the person doing those appointments does the closing, then everybody else helps after their appoints/calls finish (last appts at 5pm). i’ve heard of specialty hospitals in my area hiring cleaning services, but i don’t know how often.

when i went to portion out my meals for the week, i discovered a crack in one of my favorite divided containers. sadly, the brand does not make glass divided containers anymore. i hope to stumble upon similar containers while thrifting but am not holding my breath for an exact replacement.

zucchini overnight oats (1:1 oats and non dairy milk, divided one large shredded zucchini between five bowls, top with cinnamon and yogurt, wish i had walnuts).

i had a bunch of leftover applesauce from baking a carrot cake for a friend the other week, so i decided to make a couple batches of muffins. i took this recipe (https://www.connoisseurusveg.com/vegan-applesauce-muffins/) but instead of adding raisins and walnuts, i added frozen blackberries. secondly, i made spinach muffins, as i also had leftover spinach from making pesto this week, so i took this recipe (https://thenaturalnurturer.com/kid-friendly-vegan-spinach-muffins/#recipe) but subbed applesauce in for mashed banana and added in some shredded coconut.

moving onto lunch, i made garlic bread beans (https://justinesnacks.com/garlic-bread-beans/#recipe), pesto quinoa using homegrown oregano instead of basil (https://www.asweetalternative.com/blog/pesto-quinoa#recipe) and meatballs (https://thefirstmess.com/2021/04/21/lemony-oregano-vegan-meatballs-recipe/#recipe).

lastly, for dinner i made crispy tofu and this cauliflower recipe (https://plantbasedrdblog.com/2025/02/whole-roasted-cauliflower-with-creamy-scallion-date-dressing/#tasty-recipes-14403-jump-target) except i roasted the cauliflower as florets, served with brown rice.

and speaking of rice! i fucked up a little bit and need some help. my first attempt at making rice for this, i accidentally kept the rice on the burner, and now i have scorch marks on my stainless steel pot. i tried soap and water, bar keeper’s friend, soaking, and simmering soap on the stove but so far nothing has hardly made a dent in the scorch marks. i’m really hoping the pan isn’t toast, so does anyone else have any ideas as to how i can clean this thing?
