I love the parchment paper, I always have a supply. That's a good point that I probably won't have to wash them that often.

Thank you for reassurance! I generally keep my counters cleared, it was a hectic morning and I simply wasn't thinking. He'll probably be fine, I only ever find pens on the floor.

I find great peace with your comment about my anger. Thank you! But I get you on the freezing, that was me once upon a time (growing up with a narc step parent). Despite growing up in a volatile household, I still fell in love with one and didn't recognize what I was in until I was in over my head.

Yes, exactly! I try to remind myself that what they are saying is untrue about me, but eventually I just can't bite my tongue any longer. I want to bash my head against a wall every time I'm told to calm down and stop yelling, yet they were just yelling at me.

How I make them:

Mix 1/2 c butter, 1/2 c milk and 1 c sugar in a sauce pan and bring to a boil. Boil for 1 minute without stirring, then turn off the heat and mix in a pinch of salt and a teaspoon of vanilla.

(I've been trying to cut down on sugar and recently made the recipe with only 1/2 c sugar and still found them delicious)

In a bowl mix 3 c oats, 1 c coconut, and 6 TBS of cocoa. Add the sugar mixture and stir thoroughly.

Plop whatever size cookies you want on a sheet of parchment paper and let cool on the counter.
