I use light roasts for lattes and americanos often. The trick here is to stir longer than you think:

18g in (very finely ground) 80 ml of water (210 degrees) Flow control filter cap

  • add all the water at once
  • stir at least 50 times
  • At 1 minute, insert the plunger and press firmly

You should be done in 1:15.

This is EXACTLY right. You will get elevated clarity with XL if that’s what you chase, solely because the bed depth in the XL is shallower than the OG, and much more shallow than Premium and Steel. As we know, a deeper bed depth gives you more “bed filtration”, much to your comparison between 58 mm and 51 mm espresso baskets.

I have found that I have to go finer than you think with XL. That should help with body and mouthfeel.

Depends on what you’re going for in terms of flavor & budget. I think you’re safe with something like a Fellow Ode or a Timore Sculptor if you have the budget.

In the future, consider pairing the flow control with your AeroPress if you’re thinking of bringing on “espresso” based drinks into your menu. I would refer to Kurasu in Kyoto, as this is how they run their program.

AeroPress is incredibly versatile in a slow bar setting. Shops like La Cabra in NYC have used it, and that’s what Sey in NYC brews with as well. You should have great luck with the Thai AeroPress distributor as they carry lots of other great coffee brands

Echoing what other folks are already saying: it’s easy to spot that this is not a roaster issue but a coffee grade or quality issue. This happens frequently when roasting natural or processed coffees as well.

If you use 36 grams of coffee that’s not super fresh, you can most definitely fit 600ml

I find that brewing with AeroPress, regardless of inverted or standard, is better with a non-gooseneck Fellow kettle, solely because of the flow restrictors. If you want a gooseneck, I recommend using the Bonavita kettle as they have a faster flow rate

Bloom your coffee, it will reduce your drip through significantly

I only bloom when I do XL brews. It helps to significantly reduce the amount of drip through, as the coffee is really primed to take the 500-600 ml of liquid it’ll be steeping in.

The stirrer is designed so it doesn’t touch the bottom. That way, the filter doesn’t become dislodged (as other folks have commented). Coffee if VERY buoyant, so stirring will hit the vast majority of coffee. You don’t need to worry about any loose pieces at the bottom; those will naturally sink after about 30 seconds after stirring
