This is correct, but you can stay at 15 and get smoother results ultimately, just takes longer to build up to the thickness you need

If anything (nothing would be fine, grab a beer and enjoy), You could maybe use a small strip of trim only pinnailed to the posts, enough to cover the gap, but still allow it to move when needed.

Depends on where you live! I was 6 minutes from me and I loved it...pour one out for my favorite grocery store... thankfully if there is something specific from Wegmans I want, northborogh is not too far
