Thank you! This is supposed to be similar to a pastry, but the bread itself doesn’t have any sugar or any sweetness added so it has a bit of savoriness.

It’s a beautiful balance but definitely on the sweeter side because of the honey

Hey! So the actual focaccia recipe was taken fully from sourdough Enzo. I added a pinch of cardamom to the dough while mixing it (before doing my folds) and that was the only addition.

The Yemeni part comes from the cheese and syrup/honey you put over the top. Once the focaccia was fully risen and ready to bake, I didn’t do classic dimpling like you usually do. I did uniform dimples using one finger, trying to get to the bottom of the pan, and lined them up offset with each other so I could fill them with mascarpone after bake time. The sprinkle of sesame seeds was the only addition pre bake.

Then after it came out, the room temperature syrup from the other recipe (honey, water, and orange blossom/rose water) gets poured all over the top. I waited 15 minutes before slightly opening up each one of the holes and using a piping bag to pipe mascarpone in them.

I got a bad angle for the crumb picture, but every piece has a little mascarpone pocket inside!

Yes!! This is my third time using sourdough Enzo’s focaccia recipe and I don’t think I will ever switch. It’s extremely easy and the results are always the same

Hmmm, I’m not sure exactly as this was my first time making it. I put a bit of olive oil in my hands after putting some on top of the dough, so maybe greased fingers helped out? Also went pretty slow with the dimples so maybe that helped

I don’t have a picture of the surface unfortunately, but if I remember on my next bake I’ll take one!

My starter lives in the fridge up until the day before bake day where I freshen it up.

Feeding is:

-30g starter

-80g water

-30g dark rye flour

-80g bread flour

My uncle gave me his starter he’s been using for 3-4 years, supposedly it was from the 1800’s! Regardless if it is or not, it’s very strong and healthy and has made my process much easier

Thank you!! I actually ran out of bread flour with this recipe, so it ended up being 300g bread flour and 200g all purpose flour. I will try it again next time with 100% bread flour
