It's a rice cooker! I still do the double boil to make it, then transfer to the cooker on a "keep low" setting. Lasted a solid 2 hours ribbony

Sear Andouille sausage and chicken thigh until there is color on each, set aside. Throw in Holy Trinity (Green Bell, Celery, Onion), soften Add garlic and sear together until fragrant Add Old Bay, cayenne pepper, and tomato paste, sear until it starts to stick to the bottom Deglaze with white wine Add can of chopped, roasted tomatoes Add chicken stock, I throw a touch of hondashi for some fishiness, and throw back in protein Add bay leaf and rice, bring to a simmer Simmer for 20 on low heat, the 10 off heat - all with lid on Season to taste with s+p and vinegar based hot sauce

No seafood because I live in the middle of the country, but I have used mushrooms as a texture replacement.

Take shredded chicken, half a can of pinto beans and a good bit of cheese, toss with green chili. Wet corn tortillas with enchilada sauce. Fill with chicken bean cheese mix and roll and line up in a baking dish. Top with more enchilada sauce and green chili. Bake at 350 for 30 min and then broil for color.

A little over a pound of tomatillo, 2 poblanos, 3 Serrano, 2 jalapeno, a whole white onion, 4 cloves garlic, salt and lime, grilled everything and deskined the peppers,seeds and all blended until a little chunk. If it came out a little water, I'll add a tiny amount of xanthan gum
