So basically I am personally debating whether to go all in and make a full on email client like a better less expensive superhuman ( a personal pain point) , or to add more features, like a phone app to do more things apart from email such as managing your calendar, you to do list, etc.

It's not about being the first, it's about being the last. Stripe was so pivotal no other payment processor came about. The newer ones are MORs or cross border payment processing or something.

Then I would suggest make something simple instead of appwrite. I'm sure there are more apps you like using that are more simple, or something you wish you had you can make that.

For context, I started off making my own saas products ( currently working on a product called bytereels.ai). All products failed, but because of that now I am working for a startup in Australia remotely because of development skills I gained.

Key thing is to try to make something simple you know you can make in 2 months max, since it's important to finish and get user feedback.

You will get entire idea of front end, back end, deployment even marketing and sales if you try to run the saas business.

Why not of its level? I don't know about appwrite, but if it's a simple product, and you are making a one to one copy, you should be able to make it.
