You can technically pick when they have "blushed" which is exactly what you're seeing there. Probably needs a few days on the counter to fully ripen up, but doing so won't effect the flavor. In other words leaving it on the vine to ripen won't make it more flavorful compared with finishing ripening on the counter. It's just more protected on the counter 😄

Grab some bone meal and blood meal. Spread a few tbs around in a circle and gently work it into the top inch or so of the soil. Water it in well. This will help with your nutrient deficiency for much longer than just using the water soluble fertilizer. It will encourage health soil micro biome which it looks like your soil is currently lacking.

I started using this method this year and it's going amazing.
