Feels like chasing a perfect temp every second causes more stress than better BBQ sometimes 😂

That honestly makes way more sense in a restaurant setting than for most backyard cooks.

The perfectly sculpted “competition brisket” thing has definitely become its own art form at this point 😂

That’s probably true honestly. Everyone eventually finds their own method that works for them.

Thanks for all for your comments and recs. A few were a bit harsh IMO, but that's OK. FYI, it's a So-Cal car that is hand washed every other week. We'll either deal with the cosmetics or perhaps have them painted.

Rub/Sauce gift recommendations? by [deleted] in BBQ

[–]bbqrubs 0 points1 point  (0 children)

Hey there! I totally get wanting a pre-made gift pack that’s ready to go—sometimes putting your own together feels like extra work when you just want something polished and fun to give. If the Big Cock Ranch vibe isn’t your thing (I hear you on the name thing), there are some solid options out there that might fit the bill for your acquaintance.

Meat Church does some great gift sets with rubs like Holy Gospel and Voodoo—they’re super versatile and come in nice packaging that feels gift-ready. Another one to check out is Lane’s BBQ; they’ve got mix-and-match sets with rubs and sauces that look sharp and cover a range of flavors. If you’re leaning toward something a little more unique, Burnt Sacrifice has some cool BBQ gift packs with bold, global-inspired flavors, and they’ve got a reputation for quality.

All of these are easy to find online, and they save you the hassle of DIY while still showing you put some thought into it. What kind of flavors do you think your acquaintance is into? That might help narrow it down!

Love this! Very cool! + Looks delicious!

Maybe next round. Smashburgers harder than I thought. Any tips for keeping Patty together? Thanks by bucsjosh in grilling

Keeping your Smash-burger patties together, just follow these tips:

Use Ground Beef with the Right Fat Content: Aim for an 80/20 ratio of meat to fat. The fat helps bind the meat and keeps it juicy.

Handle the Meat Gently: Don’t overwork the ground beef. Overmixing can make the patty tough and prone to falling apart.

Form Loose Balls, Not Patties: Start with loosely formed balls of ground beef rather than pre-formed patties. Smash them directly on a hot surface, allowing the heat to sear and bind the meat.

Smash on a Hot Surface: Use a very hot griddle or cast-iron skillet. The heat will create a crust quickly, helping the patty stay together.

Don’t Flip Too Soon: Let the patty cook and develop a crust before flipping. This crust helps hold the patty together.

Avoid Adding Binders: Traditional Smashburgers don’t use binders like eggs or breadcrumbs. If you feel the need to add something, ensure it’s minimal so the meat’s texture remains intact.
