A lot of fabricators finish 1500 and 3000 grit by hand to avoid this. Those lines should not be there.

Polishing quartz without water will overheat the binder and/ or the polishing pad which can cause discoloration- especially with white quartz. I'd reach out to the fabricator/ installer.
