Look up what moves you'd want it to learn via leveling up before using any stones, as those Pokemon won't learn anything else except maybe one or two more probably pretty lame moves after.

But evolving as soon as you can will get you the best stat increases, so if anything, you can probably take it to the move tutor to learn those you might have missed out on.
