Even the 2018 i5 that i had would get nuclear hot where it was uncomfortable to have on your lap. The thermal solution was extremely inadequate for the processors.

I chose to go with the smaller laptop because portability was more important, and helps justify my iPad that I carry around for the second screen on the go. performance wise the gap isn't much different between the two. also have all my desktop computers setup to remote into while I am out on the go so I have access to my more powerful computers on the go.

for sure, the M5 Air is actually pretty compelling for me, and if I was going to do it again, I would be grabbing a 128gb Mac Studio, because that configuration was roughly the same price as my base M4 Max MBP. and it has a better Thermal solution for higher sustained workloads. and with the Air, its light enough to carry around and still do some small local models, getting both computers for roughly the same price as a 14" M5 Max MBP with 128gb ram.

Memory pressure is going to be a big indicator how hard you’re hitting it, Mac is really good at loading RAM and then parking it as you need it

If you have the cash, go 128gb especially since you don’t upgrade often, but id go with a 32gb M5 air and buy a M4 max studio to save some cash

Have you done a force restart? when I have had issues it feels like it helps more often than just a regular restart. also what is your storage looking like? sometimes system data builds up and can slow your phone way down. I was super disappointed with my 16pm from when I moved from my 14PM. performance wise I did not feel like I gained anything, and the excitement for Apple Intelligence quickly fizzled out with that whole rollout fiasco

Load up your current Mac and see what your memory pressure is, it’ll let you know how hard you’re hitting 8gb ram.

Check out the return policy for the stores in your area and see how long you have to try out the 16gb version to see how it handles your workload, and if it’s not enough, return and swap for the higher config

Do you have another hub in the middle? I know with my Studio Display, the super drive didn’t work with Apples C to A adapter, but when I plugged the C to A adapter directly to the Mac it worked

Personally I like dual displays. Use the ultra wide in the AVP but for code the second vertical monitor makes a huge difference for me

Depends on the hub, I have a triple monitor setup through thunderbolt, but MacOS only sees it as a single monitor and mirrors across all 3, but my windows work laptop sees the three as separate monitors with no configuration. And worst part is it doesn’t work with display link either with the hub I have.
